The apple galette des rois

Soon after the festive season comes Epiphany! A true moment of conviviality, the galette des rois is a time for sharing and indulgence. But if you’ve had enough of frangipane, here’s a fresh take on the apple galette!

Recipe

Galette des rois with apples

Preparation time: 15 minutes – Cooking time: 25 minutes – Standing time: 1 hour

Ingredients for 8 people :

  • 2 discs puff pastry
  • 1 egg for gilding
  • 4 or 5 Boskoop apples
  • 50-80g sugar to taste
  • 50g butter
  • 2 tablespoons Calvados or apple liqueur

Preparation steps :

  1. Peel, core and coarsely slice the apples.
    Brown the apples in a frying pan with the butter.
    Sprinkle with sugar and allow to caramelize slightly.
    Add the Calvados and leave to cool.
  2. Place the apples on the first puff pastry and add the fava bean.
    Cover with the second puff pastry.
    Weld around the edge of the galette, notching for decoration.
  3. Stripe the galette with a pattern.
    Refrigerate for 1 hour to allow puff pastry to rise.
    Brush with beaten egg.
  4. Place in the oven at 210°C for approx. 25 minutes, lowering to 180°C when well risen and golden-brown.
    Leave to cool and brush with sugar syrup if you like it shiny.
