In 2022, he opened L’Incontournable on Rouen’s Place du Vieux-Marché. His cuisine is a modern bistronomic take on local terroir products, blending originality and seasonality.
Michaël Fessler (Switzerland): A graduate of the prestigious Institut Paul Bocuse in Lyon, Michaël honed his skills in Michelin-starred restaurants across Europe, working alongside renowned French chefs Christian Le Squer and Frédéric Vardon. His passion for fine dining drives him to constantly refine his techniques and elevate his culinary artistry.

The Stay
Room: Comfort “Gustave Flaubert” double room, each inspired by a character, work, or friend of the writer (Emma Bovary, Frédéric Moreau, Guy de Maupassant, etc.).
